Beef Liver - Best way to make liver and onions is to soak it in milk for 1-2 hours before cooking. Some people think that liver is bitter or more gamey, so this will remove much of the bitter taste!
Beef Heart - Like a steak, the organ is best left to rest to not lose the beefy juice! When cooked, leave the slices of the heart on the rare side of medium-rare (since it is less marbled) just like you would a tenderloin.
Beef Tongue - Can be boiled, pickled, roasted or braised in sauce! It is often served with tomato or a traditional saffron sauce with vegetables on the side!
Beef Ox Tail - This is a delicious addition to soups and stews! Slow cooking oxtail produces a delicious broth soup! Ox tail is a great introductory for those who are new to nose-to-tail eating!
WHAT TO EXPECT WHEN ORDERING
To guarantee our two-day shipping, we ship orders on Mondays & Tuesdays. Our cut-off time for orders is Friday night. Orders placed through the weekend will fall on the following week's shipments.
Bulk orders require a 50% deposit at the time of placing the order. The remaining 50% will be due before shipment is processed.
